In short, patterns are a way of looping through a collection. You can also add conditions within them as well.
If you checkout the help contents there is a lot of information on them. Also, in the Examples Repository under the Rules and Rulesets folder there is a folder with sample projects on patterns.

one part of the help info if using the Rete Network, "Using patterns with inference or optimized inference execution modes is preferable to using loops and other procedural constructs because patterns may be dynamic during the execution of a ruleset, and rules may be re-evaluated when any of the objects that match the pattern change. If an action of one rule causes a change to an object that matches a pattern used in another rule, the other rule will retest the object, and fire if the condition evaluates to true."
I agree it's not an intuitive as you might want to sort out how to create a pattern for a rule set.
